Infertility is a painful, exhausting, emotional and lonely journey. Those of you who know us personally, know that we have been through many hurdles in the last 5 years, with the deepest hope of bringing a child of our own into the world. After trying countless natural herbs and medicines, and alternative child-conceiving rituals, we sought a fertility specialist in 2019. We completed three rounds of medicated cycles, undergoing a Hysterosalpingography, and dilation/curettage procedure for polyps’ removal. Due to COVID-19, we had to stop all treatment.

T1 Underwent Surgery

April 2, 2023.

Our faithful truck #1, the backbone of Eggroll Queen’s operations, underwent a complete makeover after facing catastrophic failures in its transmission, engine, and chassis. It was a challenging moment for us, as the truck had been an integral part of our journey. Thankfully, our friend Jeff Jarzynski came to the rescue, bringing his expertise and generosity to the table. Jeff undertook the painstaking task of transferring the truck’s box from the old chassis to a new one, reconnecting every component with precision and care. Thanks to his dedication, truck #1 was back on the road, ready to serve our business and community once again.

Bite of the Week: Egg rolls at Eggroll Queen Cafe

If you step through the portal of one particular hodgepodge coffee shop / art gallery / pizza restaurant on Hamline Avenue in Falcon Heights, you’ll find yourself in the company of egg roll royalty. The takeover of Underground Music Cafe by the Eggroll Queen is tremendously recent, but you can already belly up to the bar and order your vegetarian, pork, chicken, or dessert (!) egg rolls at the outrageously reasonable price of $3 (or three for $8.)

Eggroll Queen Music Cafe Grand Opening

October 5, 2019 – Grand Opening

We are excited to have our grand opening this October 5, 2019. It has been a long journey for Eggroll Queen. It felt like just yesterday when I was still selling egg rolls out of my living room.
After a good three years on the trailer and/or food truck, I’m so happy to have a little cafe to serve my delicious, jumbo egg rolls year round to the community.

In 2014, Mai Vang started to lose her hearing and is deaf. To help her relieve stress brought on from this life changing altercation, she started to make egg rolls for big groups of people. Folks in the community found out about how good Mai’s egg rolls are and she soon became the Eggroll Queen. Mai and her husband, Chai, stopped by the Twin Cities Live studio to share their story and teach Steve and Elizabeth the art of rolling an egg roll.

‘Minority Within a Minority’: The Making of the Southern and Midwestern Asian-American Identity

St. Paul East Sider Mai Vang isn’t your typical housewife. Every morning, she wakes up at the crack of dawn, gets in her inconspicuous sedan and immerses herself into her latest favorite anime fan fiction as her husband Chai Xiong drives her across town so she can fry up crisp, golden eggrolls by the dozens.

Mai spent her childhood in a Thai refugee camp and moved to the United States when she was eight. Although it’s been more than 30 years, she still remembers her parents’ stories about the Hmong people in Thailand.
